Skinni pork kebabs with red cabbage and apple salad

  • 100 grams red cabbage, shredded
  • 50 grams mixed salad leaf
  • 50 grams baby leaf spinach
  • 1 green apple, finely sliced
  • 1/2 red pepper, finely sliced
  • 1/2 lemon, juice only
  • flaked sea salt
  • freshly ground black pepper

Super healthy, light, AND delicious, this recipe takes our lean Skinni pork kebabs and ramps up the fresh flavours with a red cabbage, spinach and apple salad. You could take the flavours even further with a scatter of caraway or fennel in the pan, giving the dish a slightly Germanic feel.

There are plenty of good things in this recipe to get excited about. Of course, you get the lean protein that is the heart of our Skinni range, but pork also has high amounts of mineral selenium which you need for optimum cognitive health. The star of the nutritional show has to be red cabbage. With all the anti-inflammatory cancer-fighting goodness that comes with all cabbage varieties, red cabbage has an extra boost from its colour. Caused by anthocyanins, a particular form of phytochemical that gives purple and blue foods their colour, which have also been shown to protect cognitive activity.

Another nutritional powerhouse is spinach. From the same family as quinoa, spinach is rich in Vitamin A, Vitamin C, and calcium. Regular consumption of spinach may reduce the risk of cataracts.

Apples are the perfect pairing for pork, and they go particularly well with the red cabbage too. Keep the skin, as many of the beneficial nutrients are concentrated there. Rich in soluble fibre and Vitamin C, apples can help lower blood cholesterol and regulate blood sugars. The added Vitamin from the fresh lemon juice helps the body to absorb iron. You could also add some grated zest so that you benefit from the rich source of phytochemicals. Wash lemons in soapy water first, or buy unwaxed.

Instructions

1. Heat a griddle or frying pan over a medium heat.

2. Add a spray of oil.

3. Cook kebabs for about 5 minutes on each side, or until the outside is browned and the meat cooked through. A splash of water onto the hot metal towards the end will create steam to keep the low-fat meat moist.

4. Toss the salad ingredients together and season with salt, pepper and lemon juice.

5. Serve salad with kebabs, and a mini wrap if you need the carbs.
