Skinni Jalfrezi with peppers and chickpeas

Here, we have added nutrient rich chickpeas instead of a simpler carbohydrate route such as rice or bread. Often thought of as a protein food (which they are) chickpeas also bring to the table plenty of complex carbohydrates and a wealth of vitamins and minerals. Not only will the added chickpeas keep you fuller for even longer, but they will help to stabilise blood sugar too. Oh, and they are high in fibre.

Adding onions and peppers to the curry boosts the flavours and textures of the dish. They also bring with them a whopping amount of heart-healthy antioxidants and immunity-boosting phytochemicals. As if that was not enough, an extra handful of spinach gives you some welcome green.

Add a wholemeal chapati on the side if you are extra hungry or just fancy eating your curry with bread instead of a knife and fork.

1. Heat the oil in a saucepan and add the peppers with the onions. Stir and cover for a few minutes. Stir again, and cover. Keep doing this until the peppers and onions have softened.

2. Add the chicken and stir for several minutes.

3. Add the Skinni jalfrezi sauce, the chickpeas and the spinach. Simmer for 10 minutes.

4. Check if it needs salt, adjust as necessary, and add the fresh herbs.

5. Serve hot, with bread if wanted.
