For Protein Filled Foods Get Your Grill On - Skinni Style

When it comes to lean, protein filled foods, the grill pan is your best friend. But don’t worry if you don’t have a grill pan, a dry frying pan does the job. Good grilling is not just about speed. Grilled meat undergoes the rapid browning that makes good meat taste great. Known in the biz as the Maillard reaction, this is where surface proteins and sugars undergo the chemical transformation that creates delicious deep flavour on the outside of the meat.


A word of warning though; aim for cast iron. If you have one decent bit of kit in your kitchen make it a cast iron frying pan. You can also get a cast iron griddle for less than the price of a low-fat lunch. With one side flat, and the other ridged, it will become your go to method for grilling meat. A non-stick pan just won’t do it as the very concept of browning in this way requires the meat to adhere to the metal surface. With a non-stick pan or electric grill, you will just create steam. The very opposite of the conditions required for browning.

Mixing up your protein filled foods is the best way to make sure you are getting a variety of the essential nutrients found in animal products. Not only will lean protein keep you fuller for longer, and supply all of your essential amino acids, but it provides a range of vitamins and minerals for optimum nutrition. Of course, grilling requires no extra fat, a fact that makes it one of the healthiest cooking methods around. Keep an eye on that lean meat though; it takes very little time to cook right through and then you need to get it on the plate quick smart. One of the greatest culinary slip ups, we tend to be a little afraid of meat and think that it cannot possibly cook in just a few minutes. But when it is this thin, it can. There’s a reason they call them minute steaks.

Speaking of quick cook lean steaks, have you tried our Skinni steaks in our fantastic pepper crumb? Not entirely necessary, but the secret to a crisp crumb, a spray of oil will help here. Cook in a frying pan rather than a griddle (the flat surface ensures all the crumb gets due attention) and serve with nothing more than a pile of salad leaf dressed in balsamic. And maybe a few slivers of finely sliced raw onion. Fantastic.
