When it comes to lean, protein filled foods, the grill pan is your best friend. But don’t worry if you don’t have a grill pan, a dry frying pan does the job. Good grilling is not just about speed. Grilled meat undergoes the rapid browning that makes good meat taste great. Known in the biz as the Maillard reaction, this is where surface proteins and sugars undergo the chemical transformation that creates delicious deep flavour on the outside of the meat.
A word of warning though; aim for cast iron. If you have one decent bit of kit in your kitchen make it a cast iron frying pan. You can also get a cast iron griddle for less than the price of a low-fat lunch. With one side flat, and the other ridged, it will become your go to method for grilling meat. A non-stick pan just won’t do it as the very concept of browning in this way requires the meat to adhere to the metal surface. With a non-stick pan or electric grill, you will just create steam. The very opposite of the conditions required for browning.
